Midnight Berry Herb Sour

For me, new moons are about turning inward, setting goals, manifesting, readjusting, planting seeds. Full moons, however, are a whole different story. I like to spend the full moons having fun, celebrating, spending time with friends. I am mindful of what thoughts and emotions arise during the full moon, because the moons light illuminates what lurks in the shadow during this phase. But otherwise, I am going with the flow and having a night on the town. My Midnight Berry Herb Sour is the perfect drink to make with your people before hitting a late night event.

Enjoy this drink whenever you please, but it's best when shared with your friends and loved ones during a celebratory event, or just when you want to have a little extra fun!

Instructions

  1. make thyme simple syrup
  1. muddle blackberries
  1. create cocktail in the shaker
  1. strain into glass and enjoy!

Hint: when making the thyme simple syrup, DO NOT boil the water because the sugar can burn, just warm the water and stir until the sugar dissolves.

Ingredients

  • 2 oz gin
  • 1 oz fresh lime juice
  • ¾ oz thyme simple syrup
  • 4-5 fresh blackberries muddled
  • 1 egg white
  • ice
  • thyme sprig + lime slice to garnish

thyme simple syrup

  • ½ cup water
  • ½ cup sugar
  • 3-4 sprigs fresh thyme

Instructions

  • make thyme simple syrup by adding water, sugar and thyme to a small sauce pan over medium head. warm gently, do NOT boil. stir until the sugar dissolves. remove from heat and let steep for 10 minutes before straining.
  • Add blackberries to a cocktail shaker and muddle until juicy.
  • Add gin, lime juice, thyme simple syrup, and egg white. Shake without ice for 15 seconds.
  • Add ice and shake again for 15–20 seconds until chilled.
  • Double strain into a coupe glass
  • Top with blackberries and a thyme sprig, then enjoy!

FAQ

Can I make this without egg white?

Yes! It’ll just be less frothy. You can also use aquafaba (chickpea liquid) for a similar foam.

Is it safe to use raw egg white?

Generally yes, but use fresh, clean eggs or pasteurized egg whites if you want the safest option.
