Ancient Celtic and Medieval folk medicine recipes often utilized blackberries, sometimes brewing their teas to alleviate various types of ailments. This helped give blackberries this healing and mystical reputation within European folklore...

Although this blackberry-themed brew isn't inherently medicinal, it is very yummy and slightly intricate, making it a ritual of whimsy in my humble opinion. This earl grey latte with blackberry lavender cold foam is ritualizing the versatility, delicious taste and violet hue of the blackberry, creating a beverage that is equal parts beautiful, gorgeous and tasty.

Unfortunately for me, my stomach doesn't usually agree with coffee (tragic, I know). But that will not stop me from have a deliciously sweet morning beverage for a little caffeinated kick. The blackberry lavender cold foam is a personal favorite of mine, combining ritual, whimsy, aesthetic and taste to create a beautifully delectable top to this otherwise simple earl grey latte.

This recipe can truly be enjoyed year round, but is especially magical during the summer time, where wild blueberries are abundant at local farmers markets just waiting to be consumed in beautifully ritualistic ways!

Ingredients

Earl Grey Latte

  • earl grey tea
  • sweetener of choice
  • milk of choice
  • ice

Blackberry Lavender Simple Syrup

  • blackberry
  • sugar of choice (white sugar for the best color)
  • lemon juice
  • culinary grade lavender

Blackberry Lavender Cold Foam

  • cup heavy whipping cream
  • blackberry lavender simple syrup

Instructions

  1. brew earl grey tea then add your sweetener of choice
  1. create blackberry lavender simple syrup
  1. create cold foam
  1. fill glass with ice, tea & milk before topping with cold foam. garnish with brown sugar and lavender!

Hint: After beautifully garnishing your beverage, be sure to mix the cold foam into the drink well to mix all the yummy flavors together!

Ingredients

Earl Grey Latte

  • 1 handful ice
  • 1 cup earl grey tea cooled
  • sweeter of choice I used honey
  • ½ cup milk of choice I used almond milk

Blackberry Lavender Simple Syrup

  • ½ cup blackberries
  • ½ cup sugar of choice use white sugar for the brightest color, but brown sugar would work well too
  • ¼ lemon juiced
  • 1 tsp culinary grade lavender

Blackberry Lavender Cold Foam

  • ¼ cup heavy whipping cream
  • 3-5 tbsp blackberry lavender simple syrup

Instructions

  • brew earl grey tea then let cool completely before adding your sweetener of choice
  • create blackberry lavender syrup by combining blackberries, sugar, lemon and lavender in a pan on the stove over low heat and let combine until creating a liquid syrup, watch this carefully!
  • create cold foam by combining syrup with whipping cream 
  • take a glass or a jar and fill it with ice, then pour the sweetened earl grey over the ice, they pour your milk of choice over the earl grey 
  • top the drink with the blackberry lavender cold foam and garnish with extra blackberries, lavender and brown sugar, then enjoy!

Storage

Store in an airtight jar and enjoy within a day or two!

Where can I find culinary grade lavender?

This is a great question. While using floral herbs in the kitchen, it is IMPERATIVE that you ensure they are culinary grade otherwise you can get sick. There are plenty of small online shops and businesses that sell culinary lavender, that's how I get mine!
