THE ABROTHECARY

Hearth Roasted Peaches with Granola & Vanilla Bean Ice Cream

Step out of the chill and into the warmth of the hearth—where the scent of spiced fruit and woodsmoke fills the air, and something sweet is always bubbling over the fire. This rustic dessert, Hearth Roasted Peaches with Granola & Vanilla Bean Ice Cream, is a tribute to the late summer harvest: golden, tender peaches roasted until their juices caramelize into syrupy magic. Crowned with a scoop of melting vanilla bean “snow” and a sprinkle of toasted granola crunch, this dish is pure tavern comfort. Whether you're a weary traveler or just in need of a little enchantment, pull up a wooden stool and let this warm, spiced creation cast its spell.

This recipe is a celebration of spring’s first treasures—those blushing, fragrant peaches that arrive just as the days begin to warm. In my tavern kitchen, Hearth Roasted Peaches mark the turning of the season, when the fire still flickers in the hearth but the scent of blooming orchards drifts in through open windows. While perfect for early spring, this dish carries beautifully into summer, making it a staple on the table from the season’s first fruit through the height of harvest.

This was inspired by my Rustic Apple Hand Pies and Strawberry Lavender Hand Pies.

Instructions

  1. In a small bowl, mix melted butter, olive oil, maple syrup, brown sugar, cinnamon, and lemon zest.
  1. Slice peaches and douse them in the mixture then transfer to a baking sheet.
  1. Bake at 350°F for 20-30 minutes, until the peaches are soft and golden, and the juices are bubbling.
  1. Top with vanilla ice cream, a sprinkle of toasted granola, and a pinch of sea salt. Spoon any remaining syrup over the top.

Hint: If your peaches aren’t very ripe, don’t worry—roasting will bring out their sweetness. Just add an extra drizzle of maple syrup before baking, and roast for 5–10 minutes longer until they’re soft and caramelized.

Substitution

Even if your reader doesn't follow a specific diet (eg. gluten free), they may have friends or family that they're cooking for that could use this. This is also a great idea to link out to another blogger with a similar recipe that fits a different diet.

FAQ

Can I use frozen peaches for this recipe?

Yes! Thaw them completely and pat dry to avoid extra moisture. You may need to reduce baking time slightly since frozen peaches tend to be softer.
