Tonight, the hearth is aglow with the promise of a simple yet enchanting treat—Warm Rustic Apple Hand Pies. The apples, gathered from the orchard just beyond the mossy path, have been gently stewed with honey and spice until they glisten like autumn’s golden dusk. Nestled within a flaky, butter-kissed crust, these little pies are meant to be held in hand, savored by the fire, and shared with kindred spirits. This recipe is so easy and so wonderfully delicious anytime of the year! They are also easy to bring to potlucks or parties given their easy on-the-go size and packaging!

This was inspired by my Warm Apple Pie Roses recipe on this site, and pairs well with a nice tub of vanilla ice cream!

  • 1 Chopping Knife
  • 1 Cutting Board
  • 1 Medium Stovetop Pot or Pan
  • 1 Wooden Spatula
  • 1 Circular cookie cutter or mouth of a cup
  • 1 fork for scoring the dough
  • 1 Small Mixing Bowl
  • 1 Whisk or Spoon for egg wash
  • 1 Sifter if using powdered sugar to garnish

Ingredients

  • 1 sheet puff pastry
  • 2 large apples diced
  • 2 tbsp honey or brown sugar
  • ground cinnamon
  • nutmeg
  • ground ginger
  • vanilla extract
  • 1 tsp lemon juice
  • 1 tbsp butter or ghee
  • 1 tbsp flour or cornstarch to thicken the filling
  • 1 large egg
  • 1 tbsp water
  • 6 sprinkles sugar to garnish pastry before baking
  • powdered sugar optional

Instructions

  • Start by dicing your apples with your knife and cutting board. Set apple pieces aside.
  • Grab your stovetop pot or pan and melt your butter or ghee. Once the butter is melted, add the diced apples, honey or brown sugar, cinnamon, ginger, nutmeg, and lemon juice then cook for 5-7 minutes until the apples soften and release their juices.
  • Sprinkle in your flour or corn starch and stir to thicken the mixture. Cook for another couple minutes then remove from heat and let cool.
  • Preheat your oven to 375℉.
  • Lightly flour a surface and roll out your puff pastry sheet. Then cut into 12 circles. You can use a cookie cutter or the mouth of a cup or glass.
  • Spoon about 1-2 tablespoons of the apple filling onto 6 of the circles.
  • Then place the other six circle atop the apple filling, crimp, and then score the dough.
  • In a small mixing bowl, whisk the egg with water and brush over the tops of the pastries.
  • Sprinkle a dash of sugar on top before putting in the oven to bake for ~20 minutes or until puffed and golden brown.
  • Let cool, dust in powdered sugar, and enjoy!
