Been really into blackberries this season, meaning I had to find a way to incorporate blackberries into my favorite and most simple dessert ritual: oat crumbles.
Crumbles are a super low lift and versatile dessert and I usually have all the ingredients in my pantry already.
But of course, in true tavern style, I had to pair this delicious bramble berry with a fragrant herb for a bit of ritual and whimsy.
Thyme is by far my favorite herb to incorporate into desserts (which says a lot because I also really love pairing berries with lavender). Theres a simple festive and fragrant element to thyme that truly elevates any and all desserts I create. It's an unsuspecting herb to pair with desserts, but take my word, it adds a bit of charm that will make you fall in love with it's tiny leaves and earthy smell.

As always, feel free to enjoy this recipe year round. However, like most of my recipes, I love spotlighting season produce, meaning mid-to-late summer would be the best time to enjoy this dessert. Then, or whenever blackberries are in season and abundant within your region!

For the Crumble
- rolled oats
- almond flour
- chopped nuts of choice
- brown sugar
- melted butter
- cinnamon
- sea salt

For the Filling
- blackberries
- honey

- vanilla bean paste (or extract)
- lemon juice

Instructions

- toss filling ingredients together

- toss crumble ingredients together

- place the crumble ingredients on top of the filling ingredients then bake

- garnish and enjoy!
Hint: Grab some gluten free oats to make this recipe entirely gluten free!
Substitutions
- blackberries - I designed this recipe with seasonality in mind, but the beauty of the crumble is its simplicity and versatility; feel free to swap out the blackberries for another fruit of choice if you'd like!
- thyme - similar to the blackberries, feel free to swap the thyme out for another herb of choice; here is where we can get creative with our fruit and herb pairings!

Blackberry Oat Crumble with Honey & Thyme

Ingredients
For the Crumble
- ½ cup rolled oats gluten free
- ¼ cup almond flour
- 2 tbsp chopped nuts of choice I used cashews because that's what I had on hand!
- 2 tbsp brown sugar
- 1.5 tbsp melted butter unsalted
- 1 dust ground cinnamon
- 1 pinch sea salt
- 1 sprinkle fresh or dried thyme
For the Filling
- 2 cups blackberries
- 1.5 tbsp honey
- 1 tsp cornstarch
- ½ tsp vanilla bean paste
- ½ tsp fresh thyme leaves
- 1 pinch sea salt
Garnish
- vanilla ice cream & honey
Instructions
- Preheat your oven to 350F
- In a bowl, gently toss together the blackberries, honey, cornstarch, vanilla, lemon zest, lemon juice, thyme, and salt until evenly coated.
- Transfer the mixture to a lightly greased small cast iron dish
- In a separate bowl, combine the oats, almond flour, walnuts, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture resembles coarse crumbs.
- Sprinkle the crumble evenly over the blackberry filling.
- Bake for 30-35 mins, or until the topping is golden brown and the blackberry filling is bubbling around the edges. Let cool for 10 minutes before serving.
- Top with some ice cream, honey and fresh thyme!
Storage
Store leftovers in an airtight container and enjoy within a couple days. Or better yet, freeze and reheat at your leisure!

Wonderfully enough, this recipe is naturally gluten free, so long as you're sure to purchase gluten free oats at the market!
