Blackberry Oat Crumble with Honey & Thyme

A deliciously tart dessert that is both simple and ritualistically whimsical, blending together seasonal blackberries with fragrant thyme and sweet honey.

Ingredients

For the Crumble

  • ½ cup rolled oats gluten free
  • ¼ cup almond flour
  • 2 tbsp chopped nuts of choice I used cashews because that's what I had on hand!
  • 2 tbsp brown sugar
  • 1.5 tbsp melted butter unsalted
  • 1 dust ground cinnamon
  • 1 pinch sea salt
  • 1 sprinkle fresh or dried thyme

For the Filling

  • 2 cups blackberries
  • 1.5 tbsp honey
  • 1 tsp cornstarch
  • ½ tsp vanilla bean paste
  • ½ tsp fresh thyme leaves
  • 1 pinch sea salt

Garnish

  • vanilla ice cream & honey

Instructions

  • Preheat your oven to 350F
  • In a bowl, gently toss together the blackberries, honey, cornstarch, vanilla, lemon zest, lemon juice, thyme, and salt until evenly coated.
  • Transfer the mixture to a lightly greased small cast iron dish
  • In a separate bowl, combine the oats, almond flour, walnuts, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture resembles coarse crumbs.
  • Sprinkle the crumble evenly over the blackberry filling.
  • Bake for 30-35 mins, or until the topping is golden brown and the blackberry filling is bubbling around the edges. Let cool for 10 minutes before serving.
  • Top with some ice cream, honey and fresh thyme!
