First, preheat your oven to 350℉.
Next, slice apples as thinly as possible. You can boil them in water for a few minutes if they are not already flimsy and bendable. I used a Mandoline slicer!
Place the thin apple slices in a large mixing bowl. Coat them with brown sugar and cinnamon and mix with your hands.
On a floured surface, roll out your puff pastry sheet into a rectangle.
Using a sharp knife, slice 5 strips (longways) of the puff pastry.
Using a spoon, spread each puff pastry strip with a thin layer of apple sauce. Then line each strip with apple slices along the top half. Fold the strip over so your apple slices are securely nestled.
Grab one end of your strip and roll it into itself so you get a spherical pastry rose pattern.
Depending on the size of the roses, you can either put them in a muffin tin or on a regular baking sheet with parchment paper.
Bake the pastry roses for 25-27 minutes in the oven.
Sprinkle some powdered sugar over them before serving and enjoy your bouquet!
