Peach & Lavender Cobbler

Ingredients

Filling

  • 5-6 peaches chopped
  • 1 tbsp brown sugar
  • 2 tbsp corn starch
  • 1 pinch sea salt
  • 1 tsp cinnamon
  • ¼ lemon juiced
  • ½ tsp culinary grade lavender

Topping

  • cup all purpose flour
  • cup rolled oats
  • ¼ cup brown sugar
  • 1 pinch sea salt
  • ½ cup unsalted butter cold & cubed
  • 1 pinch culinary grade lavender

Instructions

  • Chop up the peaches and add all the filling ingredient. Cook the peaches over medium heat for a couple minutes.
  • Add all the dough ingredients into a bowl. Using your hands or a pastry cutter, work the cold butter into the filling until it gets to a doughy consistency.
  • Place little dollops of dough on top of the peach filling until the peaches are entirely covered. Sprinkle some brown sugar and lavender on top too.
  • Bake for 35 minutes at 330F.
  • Top with ice cream and enjoy!
