Ingredients

  • 1 sheet puff pastry thawed and cold
  • 4 oz goat cheese softened
  • 1 tbsp honey plus more for drizzling
  • 1 tsp fresh thyme leaves
  • ½ tsp fresh rosemary finely chopped
  • ½ cup home made cranberry sauce
  • 2 tbsp finely chopped walnuts plus more for chopping
  • 1 egg beaten for egg wash
  • flaky sea salt for finishing

Cranberry Sauce

  • 12 oz fresh or frozen cranberries
  • ½ cup can sugar
  • ½ cup water or lemon juice
  • 1 lemon zested
  • ½ tsp ground cinnamon
  • 1 pinch sea salt

Instructions

  • Set your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Make cranberry sauce by combining the cranberries, sugar, and liquid in a medium saucepan over medium heat.Stir occasionally until the sugar dissolves and the cranberries start to pop, about 8–10 minutes. Add lemon zest and cinnamon if using, and simmer for another 2–3 minutes until the sauce thickens slightly. Taste and adjust sweetness if needed. Remove cinnamon stick if used.Cool to room temperature (it will thicken more as it cools), then store in a jar or airtight container in the fridge.
  • In a small bowl, mix together goat cheese, honey, thyme, and rosemary until creamy and well combined. Set aside.
  • Unfold your puff pastry sheet and cut it into circles or rustic squares about 3–4 inches wide.
  • Spoon a small dollop of the herbed goat cheese into the center of each piece.
  • Add a spoonful of cranberry sauce on top.
  • Sprinkle with a few chopped walnuts.
  • Gently fold the edges inward, overlapping slightly to create a rough border — let them look a bit rustic and uneven.
  • Brush the exposed pastry edges with egg wash. Then bake for 16–20 minutes, until golden and puffed, with the cranberry sauce bubbling slightly at the edges.
  • Once out of the oven, drizzle each galette with warm honey, sprinkle it with crushed walnuts and a few fresh thyme leaves, and finish with a pinch of flaky sea salt.
  • Serve on a wooden board or stone plate with a drizzle of honey pooling around the edges. Pair with spiced cider, mulled wine, or mead for a true hearthside experience.
