2ozgin
1ozfresh lime juice
¾ozthyme simple syrup
4-5fresh blackberriesmuddled
1egg white
ice
thyme sprig + lime slice to garnish
thyme simple syrup
½cupwater
½cupsugar
3-4sprigsfresh thyme
Instructions
make thyme simple syrup by adding water, sugar and thyme to a small sauce pan over medium head. warm gently, do NOT boil. stir until the sugar dissolves. remove from heat and let steep for 10 minutes before straining.
Add blackberries to a cocktail shaker and muddle until juicy.
Add gin, lime juice, thyme simple syrup, and egg white. Shake without ice for 15 seconds.
Add ice and shake again for 15–20 seconds until chilled.
Double strain into a coupe glass
Top with blackberries and a thyme sprig, then enjoy!
