Maple Ginger Ale

Ingredients

inches
fresh ginger root
peeled and finely chopped

water

maple syrup
add more or less depending on sweetness preference!
fresh lime juice

sparkling water

Instructions
Peel and finely chop your fresh ginger root. Add it to a small pot with 3 cups of water and bring to a gentle simmer. Let it simmer for 10 minutes.
Remove from heat and stir in maple syrup until fully dissolved.
Strain the ginger mixture through a fine mesh strainer into a jar or pitcher. Let it cool slightly.
Fill a glass halfway with the ginger syrup mixture, then top the rest with sparkling water.
Add a generous squeeze of fresh lime juice, stir, and enjoy immediately.
