Equipment

  • 1 Blender or food processor
  • 1 fine mesh strainer or nut milk bag
  • 1 sharp knife & cutting board
  • 1 citrus juicer optional, for the lime
  • mixing spoons
  • glasses for serving
  • pitcher optional, if batching

Ingredients

  • 1 cup fresh pineapple chunks or 100% pineapple juice
  • ½ cucumber peeled and sliced
  • 1 lime juiced
  • 1 handful fresh mint
  • 1 cup sparkling water
  • 1 handful ice
  • 1 dried lime wheel optional, for garnish

Instructions

  • Add pineapple, cucumber, mint leaves, lime juice to blender. Blend until completely smooth.
  • Pour the mixture though a fine mesh strainer or a nut milk bag into a bowl or pitcher, pressing to extract all the liquid.
  • Fill a glass with ice, pour in the juice, and top with sparkling water. Stir gently.
  • Finish with a dried lime for a touch of fantasy charm.
