Hydrating Pineapple Mint Tonic

1 Blender or food processor
1 fine mesh strainer or nut milk bag
1 sharp knife & cutting board
1 citrus juicer optional, for the lime

- 1 cup fresh pineapple chunks or 100% pineapple juice
- ½ cucumber peeled and sliced
- 1 lime juiced
- 1 handful fresh mint
- 1 cup sparkling water
- 1 handful ice
- 1 dried lime wheel optional, for garnish
Add pineapple, cucumber, mint leaves, lime juice to blender. Blend until completely smooth.
Pour the mixture though a fine mesh strainer or a nut milk bag into a bowl or pitcher, pressing to extract all the liquid.
Fill a glass with ice, pour in the juice, and top with sparkling water. Stir gently.
Finish with a dried lime for a touch of fantasy charm.
