Finely chop 1 cup's worth of ginger root. Place the ginger root in your stovetop pot with 2 cups of water.
Bring to a boil, stir with wooden spatula, and then let simmer for 5-10 minutes on low heat.
In a lidded mason jar, mix together the juice of 2 lemons with some honey or maple syrup to make your sweet lemon mixture. Sweetness is to taste. You can use a spoon to stir or you can cover the mason jar with its lid and shake.
Strain your brewed ginger water into a cup or small bowl through a handheld strainer.
Combine the brewed ginger water with the sweet lemon mixture and some sparkling water over a cup of ice! Enjoy!
