Hydrating Pineapple Mint Tonic

Jump to Recipe Print Recipe

Step through the ivy-draped door of my woodland tavern, where the air hums with soft birdsong and the scent of crushed herbs drifts on the breeze. Today’s special? A glimmering goblet of Hydrating Pineapple Mint Tonic, crafted to refresh even the weariest of wanderers. This sparkling elixir, infused with golden pineapple, cooling mint, crisp cucumber, and a splash of lime, is the perfect remedy after a sun-drenched trek through wildflower fields or a long afternoon tending potion herbs. Light, cleansing, and bubbling with forest-born vitality, it’s a drink fit for an elven healer—or anyone in need of a little magic.

This tonic is especially popular during the summer months, when the sun is high, the herbs are fresh, and hydration is key. It's a favorite among travelers, tavern guests, and garden witches alike—best enjoyed on hot afternoons or shared under starlit skies.

This was inspired by my Healthy Homemade Ginger Ale.

  • fresh pineapple chunks (or 100% pineapple juice)
  • cucumber
  • fresh lime juice
  • fresh mint leaves
  • sparkling water
  • ice
  • optional: dried lime wheel (for garnish)

Instructions

Pineapple chunks, cucumber slices, lime halves, and fresh mint in a plastic container, resting on a wooden cutting board in a kitchen setting.
  1. Blend the base: Add pineapple, cucumber, mint leaves, lime juice, and sweetener (if using) to a blender. Blend until completely smooth.
Green drink made of fresh pineapple chunks, cucumber slices, freshly squeezed lime juice, and fresh mint blended in a silver and black magic bullet blender. The blender is sitting on a wood cutting board next to a whimsical curved, spiral, white, lit candle in a beautifully decorated kitchen.
  1. Strain the juice: Pour the mixture through a fine mesh strainer or nut milk bag into a bowl or pitcher, pressing to extract all the liquid.
A fresh green drink in a glass cup is at the center. In the drink, there is a slice of fresh lime and ice. Because of the blending in the previous step, there is micro foam throughout the fresh green tonic.
  1. Add sparkle: Fill a glass with ice, pour in the juice, and top with sparkling water. Stir gently.

  1. Garnish and serve: Finish with a mint sprig, cucumber ribbon, or dried lime for a touch of fantasy charm.

Hint: For an extra-refreshing twist, chill your ingredients (especially the pineapple and cucumber) before blending—and steep the mint in a bit of hot water for a minute or two to release more of its magical oils before blending it into your potion. It makes the flavor brighter and more herbaceous!

Storage

Store the strained juice base (before adding sparkling water) in a sealed glass bottle or jar in the fridge for up to 2–3 days. For best flavor, shake gently before using, as natural separation may occur. When ready to serve, pour over ice and top with fresh sparkling water for a just-mixed taste.

FAQ

Can I use store-bought pineapple juice instead of fresh?

Yes! If you're in a hurry or your market’s out of fresh fruit, 100% pure pineapple juice works just fine. Just make sure it’s unsweetened and not from concentrate for the cleanest potion possible.

Can I make this ahead of time for a gathering?

Definitely! Blend and strain the juice base up to 2 days in advance, then chill it in a sealed jar. Just add the sparkling water right before serving to keep that bubbly tavern magic alive.
