Instructions

  1. In a small bowl, mix melted butter, olive oil, maple syrup, brown sugar, cinnamon, and lemon zest.
  1. Slice peaches and douse them in the mixture then transfer to a baking sheet.
  1. Bake at 350°F for 20-30 minutes, until the peaches are soft and golden, and the juices are bubbling.
  1. Top with vanilla ice cream, a sprinkle of toasted granola, and a pinch of sea salt. Spoon any remaining syrup over the top.

Hint: If your peaches aren’t very ripe, don’t worry—roasting will bring out their sweetness. Just add an extra drizzle of maple syrup before baking, and roast for 5–10 minutes longer until they’re soft and caramelized.

Substitution

  • Peaches - Sub with: nectarines, plums, or apricots (adjust baking time slightly—smaller fruit may cook faster).
  • Butter - Sub with: ghee (for a nuttier, rustic flavor) or coconut oil (for a dairy-free version with a hint of tropical warmth).

Ingredients

Instructions

  • Slice peaches into wedges and douse them in the mixture. Place the peaches on a baking sheet lined with parchment paper, drizzle any remaining mixture on top.
  • Bake peaches for 20-30 minutes at 350F, until they are tender, golden and the juices are bubbling.
  • Serve with granola and ice cream. Enjoy!

Storage

Peaches: Store any leftover roasted peaches in an airtight container in the refrigerator for up to 2 days.

Reheating: Warm gently in the oven at 300°F for 10 minutes or in the microwave for 30–45 seconds before serving.

Ice Cream: Store ice cream in the freezer and add fresh when serving.

Yes! Thaw them completely and pat dry to avoid extra moisture. You may need to reduce baking time slightly since frozen peaches tend to be softer.
