Sometimes the only thing getting me through the morning is knowing I have the ability to prepare myself a quick & whimsical breakfast.
I am drawn to color and magic, and this 5 minute breakfast embodies the fantastical vibe of a breakfast fit for a fairy.
And the great news is that it tastes just as good as it looks! This has been my fixation breakfast this past week and I hope it becomes yours too.

Feel free to enjoy this recipe year round, but I know figs are a rare seasonal fruit, so perhaps try making this meal during the summertime, or whenever figs are available in your area!
Ingredients

- toast
- cottage cheese
- figs
- honey
- nut/seed of choise
- herb or microgreen of choice
- sea salt & black pepper to taste
Instructions

- toast your bread then slather a generous amount of cottage cheese on top.

- crack some black pepper and salt on top before layering some thinnly sliced figs on top.

- drizzle some honey then add your seeds, nuts and greens.

- enjoy!
Substitutions
- toast - feel free to use gluten free bread if regular sourdough doesn't agree with your tummy!
- cottage cheese - feel free to swap the cottage cheese with any type of spreadable cheese, or find a dairy-free alternative!
- figs - if you can't find figs in your area, other seasonal fruits like strawberries would be a wonderful substitute!

Fairy Fig Toast

Ingredients
- 2 small slices sourdough toast or whatever type of toast you have accessible!
- 2 figs thinly sliced
- 1 drizzle honey
- 1 pinch nuts/seeds of choice I used pumpkin seeds because that's what I had on hand!
- 1 pinch herb or microgreen of choice I used microbroccoli
Instructions
- toast your bread then place it on a plate
- slather a generous amount of cottage cheese on your toast then crack some black pepper and sea salt on top
- layer thinly sliced figs on top then drizzle some honey on the figs
- sprinkle some nuts, seeds and greens of choice atop your creation, then enjoy!
Storage
if you don't finish this meal, store it in an airtight piece of tupperware and enjoy within a day or so!
FAQ
Figs are sometimes difficult to find in the summer months. If you can't find any in your area, feel free to swap it with another locally grown fruit from your region! I think strawberries would be a wonderful substitute for figs!
