This delicate, enchanting pie is especially popular during autumn and early winter celebrations. Its warm, spiced flavors and golden apple petals make it a standout centerpiece for Thanksgiving, harvest feasts, or holiday gatherings. Ingredients

For the Crust

  • unbleached all-purpose flour
  • cane sugar
  • sea salt
  • unsalted butter
  • ice water

For the Filling

  • apples (honeycrisp, pink lady or gala)
  • lemon juice
  • brown sugar
  • honey
  • ground cinnamon
  • ground nutmeg
  • melted unsalted butter

For the Caramel Glaze

  • unsalted butter
  • honey or maple syrup
  • brown sugar
  • sea salt
  • cream or milk of choice

Instructions

  1. Step 1: Make the crust
    Mix flour, sugar, and salt. Cut in cold butter until crumbly. Add ice water a little at a time until dough comes together. Form into a disk, wrap, and chill 30 minutes.
  1. Step 2: Prepare the apples
    Core apples and slice very thin (1–2 mm) with a mandolin. Toss with lemon juice. Mix brown sugar, cinnamon, nutmeg, cardamom, and honey.
  1. Step 3: Assemble the rose
    Roll out dough into a circle and place in a pie pan. Layer apple slices around the edge in overlapping circles, curving slightly upward. Roll a few slices for the center “heart.” Brush apples with the honey-spice mixture and dot with melted butter.
  1. Step 4: Bake and glaze
    Bake at 375°F (190°C) covered with foil 25 minutes, then uncovered 25–30 minutes until golden. For glaze, melt butter with honey/maple syrup, brown sugar, and salt, then brush over warm pie. Serve slightly cooled with optional thyme, powdered sugar, or cream.

Hint: To make your apple petals bend without breaking, slice them very thin (1–2 mm) and briefly soak them in warm water or steam them for 1–2 minutes before arranging. This makes them pliable and easier to curl into the rose shape, giving your pie that perfect, delicate bloom every time.

  • Apples: Swap Honeycrisp, Pink Lady, or Gala for Fuji, Braeburn, or Granny Smith for a tarter flavor.
  • Butter: Use coconut oil or plant-based margarine for a dairy-free option.
  • Honey: Maple syrup or agave works well for a vegan-friendly glaze and filling.
  • Spices: If you don’t have cardamom, a pinch of ground cloves or allspice adds similar warmth.
  • Crust: Use a pre-made puff pastry or pie crust for a quicker version.

Ingredients

For the Crust

  • 1 ¼ cup unbleached all purpose flour
  • 1 tbsp cane sugar
  • ½ tsp sea salt
  • ½ cup cold butter cubed
  • 3-4 tbsp ice water

For the Filling

  • 5-6 medium apples honey crisp, pink lady, or gala
  • 1 lemon juiced
  • 3 tbsp brown sugar
  • 2 tbsp raw honey
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp cardamom optional
  • 1 tbsp unsalted butter melted

For the Caramel Glaze

  • 2 tbsp unsalted butter
  • 2 tbsp honey or maple syrup
  • 2 tbsp brown sugar
  • 1 pinch sea salt
  • 1 splash cream or milk optional for a softer glaze

Instructions

Prepare the crust

  • In a bowl, mix flour, sugar, and salt. Cut in cold butter until it resembles coarse crumbs.
  • Add ice water a tablespoon at a time until the dough just comes together.
  • Shape into a disk, wrap, and chill for at least 30 minutes.

Roll out the crust

  • On a lightly floured surface, roll dough into a 10–11 inch circle.
  • Fit into a 9-inch pie pan or tart tin. Trim edges and chill while you prepare the apples.
  • Slice the apples
  • Core the apples (no need to peel unless you want a lighter color).
  • Using a mandolin, slice apples into very thin rounds — about 1–2 mm thick.
  • Toss slices in a large bowl with lemon juice to prevent browning.

Build the rose

  • Start from the outer edge: layer apple slices slightly overlapping in a circular pattern around the pie’s edge
  • Continue inward, slightly overlapping each row, curving the slices upward to mimic rose petals.
  • As you reach the center, roll a few slices into a tight spiral and nestle them in the middle like the heart of the rose.

Add the flavors

  • In a small bowl, mix brown sugar, cinnamon, nutmeg, cardamom, and honey.
  • Gently brush this mixture over and between the apple slices with a pastry brush.
  • Dot with melted butter or drizzle lightly with more honey.

Bake

  • Preheat the oven to 375°F (190°C).
  • Loosely cover with foil or parchment paper for the first 25 minutes (to prevent over-browning).
  • Remove foil or parchment paper and bake for another 25–30 minutes, until the apples are tender and the crust is golden.
  • The top should look slightly caramelized and glistening.

Prepare the honey caramel glaze

  • In a small saucepan, melt butter with honey (or maple syrup), brown sugar, and a pinch of salt.
  • Simmer gently for 1–2 minutes until glossy. Stir in a splash of cream if desired.
  • Brush over the warm pie to give it that luminous, nectar-like finish.

Serve

  • Let cool slightly before serving.
  • Garnish with a few fresh thyme leaves, a dusting of powdered sugar, or a drizzle of extra honey.
  • Serve with whipped cream, vanilla custard, or spiced mead caramel sauce for full tavern enchantment.

Storage

Room Temperature: Cover loosely with foil or plastic wrap and keep for up to 2 days. Best enjoyed slightly warm.

Refrigerator: Store in an airtight container for up to 4 days. Bring to room temperature or gently warm before serving.

Freezer: Wrap tightly in plastic wrap and then foil, or place in an airtight container. Freeze for up to 2 months. Thaw overnight in the fridge and warm slightly before serving.

FAQ

Q: Do I need to peel the apples?

A: Not necessarily! Leaving the skin on adds color and texture, but peeling them gives a softer, more delicate look for the rose petals.

Q: Can I make this ahead of time?

A: Absolutely! Slice and arrange the apples a few hours ahead, cover, and refrigerate until ready to bake. The crust is best rolled out just before baking.
