Apple Cranberry Goat Cheese Pastry Twists with Thyme

Jump to Recipe Print Recipe

Step into my cozy tavern, where the air smells of baked apples, warm spices, and fresh thyme crackling by the hearth. These apple cranberry goat cheese pastry twists are the kind of treat you’d find set out on a wooden table at dusk — flaky, golden, and meant to be pulled apart with sticky fingers and shared with good company. Sweet-tart fruit, honeyed goat cheese, and buttery pastry come together in a way that feels both rustic and indulgent, like something made slowly, with care, on a cold evening when the candles are lit low and time feels softer.

Apple cranberry pastry twists like these are especially popular in the fall and winter months, when apples are at their peak and cranberries begin to appear in markets. The warm spices, buttery puff pastry, and cozy herb notes make them a natural fit for autumn gatherings, holiday entertaining, and winter evenings by the fire.

They’re particularly well-suited for Thanksgiving, Christmas, and New Year’s Eve, when small, shareable pastries are often served as appetizers or grazing-board additions. The combination of fruit, goat cheese, and thyme also makes them feel elevated yet rustic — perfect for seasonal celebrations, cozy dinner parties, or any moment when you want food that feels comforting, festive, and a little magical.

Apple Cranberry Compote

  • apples of choice
  • fresh or frozen cranberries
  • lemon juice
  • maple syrup
  • water
  • cinnamon stick
  • pecans
  • thyme leaves
  • puff pastry

Goat Cheese Filling

  • plain goat cheese
  • honey
  • fresh thyme leaves

Thyme Sugar Topping

  • brown sugar
  • thyme leaves

Instructions

  1. Simmer apples, cranberries, lemon juice, maple syrup, water, and a cinnamon stick until soft and jammy. Stir in pecans and thyme, then let cool.
  1. Mix goat cheese with honey and thyme. Grind brown sugar and thyme together in a mortar and pestle.
  1. Spread goat cheese over puff pastry, top with cooled compote, fold in half, and cut into strips.
  1. Twist the strips, place on a parchment-lined baking sheet, brush with egg wash, sprinkle with thyme sugar, and bake until golden.

Hint: For the flakiest, most defined twists, keep your puff pastry cold. If it starts to soften while assembling, place it in the fridge for 5–10 minutes before cutting and twisting. This helps the layers puff beautifully in the oven and prevents the filling from leaking out.

Equipment

  • Mixing bowls (small and medium)
  • Mortar and pestle
  • Rolling pin (optional, for smoothing puff pastry)

Storage

Store leftover pastry twists in an airtight container at room temperature for up to 1 day, or in the refrigerator for up to 3 days.

To reheat, warm them in a 350°F oven for 5–7 minutes until crisp and heated through. Avoid microwaving if possible, as it can make the pastry soft rather than flaky.

FAQ

Can I make these ahead of time?

Yes. You can prepare the apple cranberry compote and the goat cheese filling up to 2 days in advance and store them in the refrigerator. Assemble and bake the pastry twists the day you plan to serve for the best texture.

What can I serve these with?

These pair beautifully with mulled wine, hot cider, herbal tea, or as part of a holiday grazing board with nuts, olives, and cured meats.
