Simple to prepare yet brimming with flavor, it’s a dish that feels both rustic and magical, perfect for cozy dinners or a seasonal gathering straight from your own enchanted tavern table.

Roasted root vegetables are especially popular during the fall and winter months, when root vegetables like carrots, beets, and parsnips are in peak season and their natural sweetness shines. Ingredients

Instructions

On a wooden cutting board, there are three white plates, one with cubed orange carrots, cubed purple beets, and cubed parsnips.
  1. Chop root vegetables into small cubes.
In a large wooden bowl, cut carrots, cut beets, and cut parsnips are seasoned.
  1. In a large bowl, toss the carrots, beets, and parsnips with olive oil, salt, pepper, garlic powder, dried oregano, oregano garlic honey, and whole cloves until evenly coated.
On a black baking sheet, cut carrots, parsnips, and beets, seasoned together lie closely before cooking.
  1. Spread the vegetables in a single layer on the prepared baking sheet. Roast for 30–35 minutes, stirring halfway through, until the vegetables are tender and lightly caramelized.

  1. Remove from the oven and transfer to a serving dish, garnish with chopped parsley, drizzle with more oregano garlic honey and serve warm.

You can also toss them halfway through roasting to ensure even browning and a perfect glaze from the oregano garlic honey.

  • Chop root vegetables into small cubes.
  • In a large bowl, toss the carrots, beets, and parsnips with olive oil, salt, pepper, garlic powder, dried oregano, oregano garlic honey, and whole cloves until evenly coated.
  • Spread the vegetables in a single layer on the prepared baking sheet. Roast for 30–35 minutes, stirring halfway through, until the vegetables are tender and lightly caramelized.

Storage

Allow the roasted vegetables to cool completely before storing.
