Maple Walnut Carrot Loaf

Ingredients

Dry Ingredients

  • 1 cup all purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger

Wet Ingredients

  • 1 egg
  • ¼ cup maple syrup
  • ¼ cup brown sugar
  • ¼ cup melted butter
  • ½ tsp vanilla extract
  • 1 cup finely grated carots
  • 3 tbsp greek yogurt
  • ½ cup chopped walnut

Greek Yogurt Maple Frosting

  • ½ cup greek yogurt
  • 2 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1-2 tsp powdered sugar optional

Instructions

  • Preheat oven to 350F. Line loaf pan with parchment paper.
  • Whisk dry ingredients in a medium bowl.
  • In a large bowl, whisk egg, maple syrup, brown sugar, butter, and vanilla. Stir in grated carrots and greek yogurt.
  • Gently fold dry into wet until just mixed. Fold in walnut.
  • Bake 35-45 minutes, or until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then transfer to a rack.
