The Bramble Berry Chicken Plate

Recently, I've been thinking a lot about the Celtic folklore behind blackberries, which have gained this mystical and healing reputation during medieval times for their versatility and appearance within various medicinal remedies. However, blackberries were most prominent in the medieval kitchen through preserves, jams, sauces and pies. I wanted to replicate a thanksgiving time cranberry sauce, but using blackberries instead. And what I created truly elevated a simple supper.

Due to the heat wave we've been experiencing in the states this summer, I opted to grab a pre-cooked chicken from the market to avoid using my oven. But that didn't stop me for adding a ritual of whimsy to this dinner recipe. I created a delicious blackberry pan sauce, which turned out beautifully tart and savory, pairing beautifully with the herb roasted chicken and garlic green beans. This is a perfect, simple yet decadent meal that makes you feel like you're treating yourself with love through proper nourishment.

Feel free to enjoy this meal year round, but there's a special ritual with preparing this dish while blackberries are in season. I encourage you to support you local farmers who are likely loaded with an abundance of freshly picked blackberries during the month of july. This is truly a very versatile fruit!

Blackberry Pan Sauce

  • blackberries

  • garlic
  • unsalted butter
  • chicken stock
  • balsalmic vinegar
  • brown sugar
  • dijon mustard

Instructions

  1. create the blackberry pan sauce
  1. blanch then sautee the green beans
  1. plate the rotisserie chicken and the green beans.
  1. garnish with blackberry pan sauce, whole blackberries, herbs, & enjoy!

Hint: Keep a watchful eye on the blackberry pan sauce while cooking it! You don't want all the good liquids to burn away or completley evaporate.

Ingredients

Blackberry Pan Sauce

  • 1 cup blackberries
  • 1 shallot diced
  • 2 cloves garlic minced
  • 1 tbsp unsalted butter
  • ¼ cup chicken stock
  • 2 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 1 tsp dijon mustard
  • 1 sprig thume
  • sea salt & ground black pepper to taste

Chicken & Beans

  • 1 rotisserie chicken
  • 1 bag green beans
  • 1 shallot diced
  • 5 cloves garlic minced
  • ¼ lemon juiced
  • unsalted butter & extra virgin olive oil
  • sea salt & ground black pepper to taste

Instructions

  • start by creating the blackberry sauce by sauteeing butter with shallot and garlic for a minute or so
  • add the blackberries, balsamic vinegar, chicken stock, dijon mustard, brown sugar and thyme, then bring this to a simmer for about 5-7 minutes
  • for the green beans, boil them in water for about ten minutes
  • afterwards, sautéed the beans over medium heat for another 5-10 minutes in a pan with olive oil, shallot, garlic, lemon juice (add a pinch of brown sugar: optional)
  • plate the rotisserie chicken with the green beans and a generous amount of the blackberry sauce
  • feel free to garnish with more herbs and a couple whole blackberries!

Storage

Store remnants in an air tight container within the fridge and enjoy within 3(ish) days. The blackberry pan sauce might hold a little longer if you decide to freeze it.

FAQ

Can I cook the chicken myself?

Yes! This recipe is very flexible; I simply used a pre-cooked chicken from the market because it was too hot to use my oven at the time.
