Ingredients
Filling
- 5-6 peaches chopped
- 1 tbsp brown sugar
- 2 tbsp corn starch
- 1 pinch sea salt
- 1 tsp cinnamon
- ¼ lemon juiced
- ½ tsp culinary grade lavender
Topping
- ⅔ cup all purpose flour
- ⅔ cup rolled oats
- ¼ cup brown sugar
- 1 pinch sea salt
- ½ cup unsalted butter cold & cubed
- 1 pinch culinary grade lavender
Instructions
- Chop up the peaches and add all the filling ingredient. Cook the peaches over medium heat for a couple minutes.
- Add all the dough ingredients into a bowl. Using your hands or a pastry cutter, work the cold butter into the filling until it gets to a doughy consistency.
- Place little dollops of dough on top of the peach filling until the peaches are entirely covered. Sprinkle some brown sugar and lavender on top too.
- Bake for 35 minutes at 330F.
- Top with ice cream and enjoy!
Storage
Store in an air tight container in the fridge and enjoy within a couple days for maximum freshness!
